Meatless Monday-Thanksgiving Cleanse

I don’t know about you, but after the last couple of days the over indulgence factor hit an all time high! Right about now, my stomach is in need of a great big cleanse. Not a desperate, green drink type of thing, but just back to some really healthy eating. Like a winter salad cleanse.

I got turned on to what I would call winter salads with this delight from The Barefoot Contessa a few years ago. The combination of butternut squash and cold arugula topped with a shallot dressing warmed enough to lightly wilt the greens is a big hit every time I serve it. Roasted winter vegetables atop salad greens have become a definite comfort food in my kitchen once there is a chill in the air.

When I tasted a form of this salad in a South End restaurant last year, I was sold on raw Brussels Sprouts, and have been trying to recreate the recipe ever since. I think this edition of Shredded Brussels Sprouts and Apple Salad from 101 Cookbooks will be really close.

People who don’t read blogs often wonder what all the fuss is about. It’s easier to share a new find then to try and explain. Discovering The Year in Food today is a perfect example of why the blogging world is so exciting to me. Filled with beautiful photos and delicious sounding recipes, it’s a place I will visit often. This Delicata Squash Salad with Roasted Potatoes and Pomegranate Seeds fits right in with today’s theme and illustrates what I’m so taken with Kimberley’s site.
Cool weather meals, healthful bowls of colorful greens. Sounds like a win/win my stomach will thank me for!
