Spring Onions for Meatless Monday

I was totally blown away today by the spring onions greeting me in the produce section of Whole Foods. Bright white and glistening, they stood out like a beacon as you walked into the area. Although I didn’t have them on my shopping list, I figured there would be a recipe lurking later in the week.  What a pleasant surprise when I skimmed thru the April Cooking Light and found a delicious dinner recipe for fusilli with caramelized spring onions.  Lucky for me, I had all the ingredients in my pantry, and paired with a spinach salad it was delightful.  If you are lucky enough to have the same in your market-Enjoy!
