Meatless Monday with Cooking Light

Do you know Cooking Light Magazine? If not, let me introduce you on this Meatless Monday. I’ve been a fan and subscriber for quite some time. Let me share with you why.

Over half the recipes in most issues are meatless and they have a great selection of vegetarian as well. Their feature section of 40 Meals under 40 Minutes is always a hit, with time saving delicious entrees, sides and desserts. Oh, and did I mention, healthy eating guru and New York Times columnist Mark Bittman gives advice on Less Meat, More Flavor, a man after my own heart.

Last months Top 100 Cookbooks of the Last 25 Years selections in the Asian category made for great reading, and I was thrilled to see one of my favorites: Hot Sour Salty Sweet: A Culinary Journey Through Southeast Asia by Jeffry Alford and Naomi Duguid make the list. I am anxious to see the vegetarian category in the August issue.

Healthy Living always features something of interest {if you’ve been reading Green With Renvy for any period of time, you know my passion for all things lemon} and the recipe makeover each month inevitably has a timely recipe that I no longer make because of the hi calorie content. This month the sweet, yeasty Hot Cross Buns are remade cutting the calories almost in half and greatly reducing the saturated fat.

Helping us all on the road to sustainability and knowing our food, First Bites guides us to what is currently in season and gives us recipes to make it sing. Rhubarb apple pie and liqueur take celery’s wild cousin and give us a reason to wait for the fresh field grown variety.
