Meatless Monday-Lobster Anyone?

This time of year I can’t get enough lobster. In quesadillas, a tomato/seafood sauce over pasta, or right out of the shell. I’ll take it any way I can get it! But my most favorite is a simple lobster salad for lunch or dinner.

Served on a bed of lightly dressed arugula, with a side of pickled vegies, this is truly a simple pleasure of my summer! I cheated a bit here, and bought my lobster per-cooked. Even though I want to know my food, I’m not overly fond of the sizzle when it goes into the boiling water. I only add a touch of chopped celery, a smidge of red onion, and enough mayo to hold it together. Mixed with salt and pepper to taste, mmmm….my mouth is watering!
