Meatless Monday for the 4th of July

Fourth of July Celebrations are right around the corner, so I wanted to share my favorite summer salad with you {and it just happens to be red, white and blue}! Pack it up for a picnic, or serve au natural in the bowl of the melon.  Either way, its a perfect pairing with your favorite main course for a summer Meatless Monday.

You’ll need:
  • Half a watermelon
  • quart strawberries
  • pint blueberries 
  • pint rasberries
  • 4 oz. feta cheese
  • springs of mint

Scoop watermelon out of shell into bite size pieces. Slice strawberries, chop mint and slice feta into small pieces.  Carve the outside of the watermelon bowl into a design of your liking.  I just made a loose wavy design.  

Toss all ingredients together and add back into bowl.  Decorate with a few additional mint sprigs. If you want to follow through with the red, white and blue, serve with lobster rolls and some blue potato salad or chips and you’re ready to go!
