Meatless Monday-Egg Mc Who?

For today’s Meatless Monday, I am following the lead of Ellen Kanner from the HuffPost and talking about breakfast.  It’s the most important meal of the day right?  I have made this meatless version of the Egg McMuffin for countless friends and family, all to rave reviews.  No one ever knows the sausage is not meat. It takes no more than 5 minutes and is a healthy breakfast sandwich that anyone can take on the go.

Ingredients:

  • 1 whole wheat English muffin
  • 1 egg {to make it even healthier, only use the egg white}
  • 1 Morningstar breakfast pattie
  • condiments { my kids slather with ketchup, I use a little low-fat mayo+Worcestershire; a bit of pepper jack cheese is also good}     I also use a two sided microwave egg poacher.  It’s kind of key; if you don’t have one, use a bowl with a microwavable top to cook the egg.  Warning: they do explode if you overcook, that’s why I like the lid on my poacher. Break the egg into one side of the poacher.  Run the sausage under water and place in the other side.  This essential step keeps it from drying out and turning into a hockey puck!.  Toast the English muffin and put the poacher in the microwave for one minute on high.  Mine has an instant minute setting that I use.Depending on the temp of your micro, this is usually enough for the sausage.  Take the sausage out and if the egg is not done yet reheat the egg for another 30 seconds.  Butter your English muffin and put on any other condiments, add the egg and pattie.  This hearty sandwich is enough to keep me ‘till dinner.  Enjoy, because You deserve a  break today!
