Meatless Monday-Artichoke Rosemary Tart
Since swearing off meat nearly 18 months ago, I am always on the hunt for pretty cookbooks {visuals are a big seller with me} that take the mystery out of vegetarian cooking. In the last year, I’ve been introduced to more whole grains than you can shake a stick at. Quinoa, farro, wheat berries and barley are all regulars in my cooking vocabulary now. Some recipes are great, others not so much. I feel lucky that I stumbled upon the wonderful blog of Virginia Willis where she previewed 3 recipes from the beautifully photographed cookbook Ancient Grains for Modern Meals by Maria Speck. For me, this will be a cookbook with which I do a lot more than look a stunning pictures! I especially love summer dinners that can be made in the morning, before it gets too hot for the stove, and then served at room temperature.
After trying the Artichoke and Rosemary Tart with Polenta Crust {make sure to scroll down-it’s the 3rd recipe} I was hooked. Now I just have to wait for my dear friend @ Joanne Rossman Designs to re-open after her August hiatus so I can rush over and buy Ancient Grains!
