Meatless Monday-Mexican Corn Chowder

I love corn any which way.  This recipe for corn chowder from one of my favorite blogs, SF Girl by Bay, cleverly uses tofu as a thickener instead of cream.  And yes, it was as good as I expected.

So good, in fact,  that the next night I used it as a sauce for a layered, black bean tortilla pie. I imagine it would be also be delicious with the addition of shrimp.  Nothing like a multi purpose recipe to add to the repertoire!  Thanks Victoria.  {MY-that’s a rather healthy portion of my treasured olive oil on the side}
