Healthy Summer Soups – Meatless Monday
Healthy summer soups are one of the easiest to make. As long as you have a food processor or blender, these no heat lovelies will satisfy everyone who wants to stay out of the kitchen. Gather your ingredients, process and chill. How simple is that for a Meatless Monday?!
I tend to like a bit of chunk in my soups, and usually process in two batches. The first into a fine puree and the second I leave a bit chunkier. In case you’ve just stopped by Green With Renvy, I am a notorious poor recipe follower. Always substituting and tweaking ingredients. So, head to you local farmers market and blend away. With fresh summer produce, it’s hard to come up with a bad combo.
1. Cantelope+Cucumber
This soup is very refreshing and just a little sweet. Blend 1/2 cantelope, 1/2 large cucumber 3 chives. Chill
2. Watermelon Gazpacho
1 pound tomoatoes, 4 cups watermelon, 1 unwaxed cucumber, 1/4 c. olive oil, 1 T. balsamic vinegar, salt and pepper to taste. Salt and pepper to taste. Garnish with chopped basil and finely chopped feta cheese. {oops forgot the feta for the photo-i guess it’s optional}
3. Avocado and Pea
I’ve been on a bit of an avocado terror of late, and after my success with avocado chocolate mouse, I’ll try them in anything. Not disappointed. ..2 avocados, 2 cups cooked or frozen peas, 1 cup greek yogurt {I use Stonyfield} 3 T. lemon juice. Chill. Salt and pepper to taste. Garnish with fresh mint and freshly grated parmesan.
4. Blueberry + Yogurt
I would call this one more of a dessert soup. 1cup Greek yogurt {again I use Stonyfield}, 1 cup blueberries, 1/2 cucumber. Blend and chill. Garnish with mint leaves or chopped mint.
5. Roasted Red Pepper+Tomato
6 cups tomatoes, 1 medium unwaxed cucumber, 2 roasted red peppers,1 roasted adobe chili , 1/4 c. olive oil, 2 T. apple cider vinegar, 1 clove garlic. Blend throughly and chill. Salt and pepper to taste. Garnish-drizzle of olive oil, chopped veggies. .
6. Cucumber + Grapes + Almonds
2 cucumbers, handful of grapes, 1 thick slice of bread, 1/2 cup of almonds, 3 T. olive oil, 3 scallions 1/2 an avocado. Process in blender and chill. Salt and pepper to taste. Garnish with chives and croutons and Parmesan cheese.
