Cool Down on Meatless Monday with Cucumber Soup

The dog days of summer have hit before we’re ready, and the temperatures make any kind of activity at the stove a chore. Cool Cucumber Soup is the perfect soulution for Meatless Monday.
You’ll need:
- 4 medium cucumbers, peeled and seeded
- 1 c melon-you can use honeydew or even watermelon
- 1 T. kosher salt
- 1 clove garlic – pressed
- 1/4 c mint
- 1 1/2 c Stonyfield greek yogurt
- white pepper to taste {you can use black pepper-it’s a visual choice}
- chopped mint and chives for garnish
Blend everything in blender until desired consistency. I like to a bit chunky. If mixture is too thick you can thin with water or a little orange juice.
Let chill for several hours until cold. Serve with your favorite whole grain crackers or roll and you’re good to go for dinner. I think this summer will be filled with soups of many colors!
